Happy as Larry is a food truck and pop-up pizzeria is giving Sydney a taste of traditional Napoli style wood fired pizza. The brainchild of three Aussie mates, Chris Lu, Adam Choker and Anthony Severino whose collective hospitality experience include restaurants, cafes, pizzerias, bars and nightclubs.
Happy as Larry offers a seasonal menu, changing daily depending on the fresh produce available each morning. The Happy as Larry team visits Sydney markets daily to get the freshest quality seasonal NSW produce, with the exception of imported Neapolitan flour and San Mazano tomatoes sourced from the southern slopes of Mount Vesuvius in Naples.
Anthony Severino, Head Chef and Co-Owner, spent over a year in Italy researching the art of traditional pizza making. “I still remember cooking my very first pizza in an old brick oven in my nonas back yard my grandfather built. I spent years in Italy learning about the different techniques and the way they vary in different regions but it was the Napoletana pizza that really stuck with me.” Anthony says.
The truck itself is something to marvel upon, made from recycled materials featuring a twenty-foot converted shipping container equipped with an eco generator making the truck self-sufficient and fully sustainable. Happy as Larry can be spotted miles away with its rich custom blue paint job and bright pops of neon as it comes to life at night, combining a contemporary design with a splash of vibrant fun.
Chris Lu, Co-Owner of Happy as Larry says, “We wanted to push the concept of the food truck to give an overall sensory experience. While our main focus is also on the food we want to engage people over all 5 senses. From the moment you approach the truck weather is be the theatre of the kitchen the vibe of the music or even the smell of the wood fire oven the experience has already began.”
